4th of July Recipes

The 4th of July is fast approaching and what better way to celebrate your independence than with Barbeque Dishes and All American cocktails. 

So choose your spot to watch the fireworks, bring along the grill and try out some of our favorite Gourmet Productions recipes.

 

Apricot Chipotle Chicken

Glaze:

1oz chopped white onion

1 tsp minced garlic

1 8oz can apricots in light syrup

1 oz dried apricots

3 TBSP cider vinegar

1/2 ancho chile pepper

1 tsp chipotle sauce

1 tsp tomato paste

1/8 c. brown sugar          

Simmer ingredents down, let cool, blend till smooth.

Brush the apricot mixture onto the chicken throughout the cooking process.  Chicken should take approximately 6 minutes for each side.

LiberTEA

1 part citrus vodka

1 part light rum

1 part gin

1 part Contreau

1 part tequila

1/4 fresh squeezed lime

1/4 fresh squeezed lemon

dash of orange juice

splash of cola    

Mix all ingredients, pour over ice, garnish with wedge of lemon.

Have You Found the Foundry?

Wow...it has been a long time since you have been graced with an entry from the crew here at Gourmet Productions.  Let's make this a more regular occurrence!  My name is Kindi, and I am the new GP Blogster.  Many of you know me, but if you don't, stop in and introduce yourself.

Have you heard of the new event venue in Lake Oswego?  This past Tuesday, we were lucky enough to have the opportunity to cater the grand opening and ribbon cutting ceremony for The Foundry at Oswego Pointe.  After a fantastic speech by owner, Noel Peterson, about 300 people went upstairs to enjoy the stunning river view and partake in lunch and refreshments.  Executive Chef, Jim Joyce, even gave a cooking demo of his world-famous Panzanella, an Italian bread salad.

Guests sipped on ginger lemonade, fruity herbal and mango madness iced teas, while listening to the soothing sounds of the Pete Krebs Trio.  The menu consisted of Roasted Shrimp Orzo with Feta and Dill, Mediterranean Quinoa Salad, Dragon Noodles with Sesame Seeds and Scallions, Spinach and Goat Cheese Gallette, Garlicky Asparagus, Spring Baby Greens with Preserved Lemon Vinaigrette and, of course, an array of scrumptious petite sweets.  Throughout the event I heard many comments on how incredible our food tasted!

Friday Night Fiesta

Last week we catered a rehearsal dinner with a Mexican theme.  This home was created for parties- complete with a covered patio, sweeping views, and a fantastic bar.  The guests played “Murder in Margaritaville”, which is a great way for everyone to interact and mucho fun.  They all got into it, complete with costumes à la Jimmy Buffet. 

We served Quesadillas cooked on site, Tostadas topped with Ceviche, Felipe’s fabulous Salsa, Guacamole & Tortilla Chips, Carne Asada, Salmon with Mango Black Bean Salsa, Romaine & Jicama Salad, Corn Tomato & Green Bean Salad, zesty Fruit Salad with Cayenne and Cheddar Corn Muffins.  ¡Que Bueno!  It was all washed down with traditional & strawberry Margaritas.  After the meal and the mystery was solved, everyone relaxed over Mexican Chocolate Cheesecake with a Bittersweet Chocolate Diablo Sauce.  It was an evening to remember even if no one jumped into the pool!

We Party Too

Our sweet, little Kindi is getting married! To celebrate the occasion, the GP girls threw her a 'Game Night' bachelorette party at JR's house.  We whipped out the game Apples to Apples, noshed on fresh strawberry ginger shortcakes (made by JR), peanut butter-filled chocolate cupcake and lemon-blueberry bars (both made by Mandy) and sipped wine and ginger ale. It was a lovely evening, a wonderful time to be ourselves, have fun outside of the shop and celebrate Kindi. This is definitely a party we will duplicate in the near future even if there is no real reason other than to have fun!
 
This party was so easy to pull off and you can do it too with no thought at all. Invite a small group of family and/or friends, pull out a board game, stop by Gourmet Productions to pick up some meal fixin's, Ben's delectable dessert, some wine (or Izzi's for the non-drinking crowd) and presto, a great party!  In a world where we rush around too much, it is nice to slow down and play with our family and friends...and eat some wonderful food!
